rhubarb bread ...

 my neighbor brought me a small loaf of this heaven
she said it was rhubarb bread, but it is more like a cake ... or a muffin
it would be perfect as a muffin top in one of these [specialty pans from Wilton]
Mix together 1 1/2 cups diced rhubarb and 1 cup sugar.  Set aside.

Cream together 1 cup brown sugar, 2/3 cup oil (or perhaps use apple sauce to cut the calories ... but who's counting?), 1 cup buttermilk, 1 egg, 1 (5 ml)  teaspoon vanilla.

In a large bowl mix together 2 1/2 cups flour, 1 teaspoon salt, 1/2 cup nuts, 1 teaspoon baking soda.

Combine all three mixtures together in the large bowl of dry ingredients, and mix together until well blended.  Put in small bread pans (or in muffin top pan!), filling just half way so that it won't overflow when cooking.

In a small bowl, combine 1/2 cup sugar, 1 teaspoon cinnamon, and 1 tablespoon butter.  Crumble over top of pans.

Bake 1 hour at 325°
Enjoy ... maybe even with some ice cream!
